Eagles/Cowboys today, so I wanted to make something with a Texas
connection. I decided to go with BBQ baby back ribs. I first simmered
the ribs for about three hours in a braising liquid. But when I took
them out of the braising to cool them off and add the homemade bourbon
BBQ sauce, the meat was already falling off the bone.So, I made a game-time decision and instead of BBQ baby back ribs, I
pulled all the meat off the bones, fork-shredded it and did shredded
BBQ pork topped with tangy cole slaw tossed with crumbled bleu cheese
on toasted rolls with a side of onion rings. In the glass, a dark ale,
Sam Adams Lager (two bottles of which were also used in the braising
liquid.)
Now that's something I want to eat while sitting on the couch on Sunday. Delicious meat and some nice fried sides to go along with it -- all washed down with a Sam. Mmmm, mmmm, mmm.
